BLUE CHEESE MAKERS
A couple of weeks ago, Bear sampled some of Mick’s home-made blue cheese (yes, he was showing off again), and he said he would like to try making some himself. For a bit of moral support Bear then roped in Len to help. Anyway, Mick invited them both around to his place to spend a morning in a bit of cheese making. The activity involved a few steps, separated by long spells of sitting and waiting for the bugs that were added to the milk, to do their thing.
Between 9:00am and 1:00 pm they converted eight litres of milk into four fresh cheeses, each weighing approximately 250g (about the size of a small camembert). Upon completion Len and Bear now have two cheeses each, that are slowly maturing at their homes. Over the next two months they should turn from white to blue, at which point they will probably be consumed very quickly with a bottle of red and a few crackers.
